Sharpening stone low grit 400/1000 The KAI 400/1000 sharpening stone is made of mineral carbide (artificial mineral of high thermal conductivity and strength) and is used in sharpened knives or in greased blades, as it is used for grinding. It is ideal for high hardness knives and fits all KAI Shun knives. Equipped with base - water basin which constantly keeps the stone wet during use. To perfect the angle, additional stones with higher grit should be used. Instructions for use: Soak the stone in water for 5 to 10 minutes and then place it on a firm base. Step 1 Start from the hard side, pushing the knife up and down in a semicircular motion, without much pressure. During the process, the angle between the knife and the stone should be between 8º and 20º. With proper use, you will repeat the above procedure in about 1 to 2 months. The use of one side or the other depends on the size of the blade problem. Step 2 Repeat the same process with the thin side of the stone, applying less pressure this time. Step 3 Clean the knife with a cloth and the stone with a brush, to remove the shavings. Leave it outdoors until it is completely dry.
